Pickled Onions

Ingredients

  • 1 Red Onion

  • 1.5 Cups Water

  • 1.5 Cups White Vinegar

  • 1/4 C Cane Sugar

  • 1.5 Tbsp Salt

  • 1 tsp Black Peppercorns

  • A pinch of Red Pepper Flakes

  1. Cut the red onion in half through the root

  2. Thinly slice each half into half moons (I use a mandolin on the second setting)

  3. Combine water, vinegar, sugar and salt in a saucepan over medium-high heat, and stir until dissolved and just barely boiling

  4. Let mixture cool a few minutes, meanwhile add peppercorns, pepper flakes and then onions to a mason jar (I used two because they were small)

  5. Pour vinegar mixture into jar, its okay if you have some leftover as long as all the onions are submerged

  6. Seal jar and put in refrigerator once it cools to room temperature

  7. Onions will keep in the fridge for about 2 weeks
